Vegetarian dishes contain grains such as rice, wheat, and millet; lentils; beans; vegetables; fruits; dry fruits; nuts; aromatic spices; dairy products such as milk, curd/ yoghurt, cheese, and butter; moderate amount of plant-based oils; and moderate amount of seasonings. Vegetarian cuisine is promoted by Ayurveda, a holistic system of medicine and well-being which originated in India thousands of years ago. Vegetarian food can be cooked with a balance of carbohydrates, proteins, vitamins and minerals, vegetables and fruits, dairy, and less oil and fat.
